Our Gir Cow ghee is made from milk of only the Desi Gir cow and comes from our farmer in Satara, Maharashtra.

Desi Gir Cow is native to Gir forest of Gujarat, India. Like all Desi cow breeds, Desi Gir Cow has a prominent hump & excess loose skin near the neck area. Known for her peaceful & loving nature with resilience to any climate, the Gir cow became a favorite amongst Indian farmers and thus is found across different regions of India now.

Our Gir Cow ghee (bilona method) is made through the traditional method recommended by Indian texts and passed on through generations. Here. the milk is made from curd and not from cream (malai).

It is said that such ghee is higher nutritional value & collected from these cows at a specific time of the day and boiled. This milk is then set to make curd using the remaining curd of the earlier day (curd starter).

The curd is then churned using bilona (wooden churner) in a clockwise and anti-clockwise direction. Slowly, the butter separates from the rest of the liquid curd /buttermilk.

Butter is then boiled at slow speed and slowly the room fills with a nutty/earthy flavour. This is an indication that ghee is almost ready.

On further boiling, a fatty golden liquid (Ghee) is formed.

When ghee cools down, it changes from liquid Ghee to semi-solid ghee. It is packed in Glass bottles to keep it completely safe and pure.

  2. 1) At farmer’s place, Some Gir cows are in the milking stage and some are in their resting stage. In milking cows, milk is first had by the calf and then milk is collected by the farmer. Non-milking cows are taken care of by the farmer till their natural death.

2) It is said that Desi cow bilona ghee never goes bad if there is no contact with moisture. Such ghee is said to have high medicinal value and is used in alternative medicine treatments. i.e. Older the ghee, the higher its medicinal value.
