Tur dal Unpolish (Stoneground, traditional way) is Deshi / Indigenous variety.
As it is stoneground i.e. traditional stone grinder is used for making dal from whole grain, it is more nutritious as well as tasty. However, it will take some time to cook as compared to dal-mill dal. This is because the outer layer (chilka) is still present in higher quantity due to traditional method.
Suggest to cook all dals in vessel /patela. Skim off the foam that gather when cooking dal. Avoid using pressure cooker.
Soaking overnight is best. This reduces the cooking time as well as nutrients are better absorbed by our body.
